Did you know carrots come in more colors than orange? Heirloom carrots can be red, yellow, or even purple!
While orange carrots are known for their beta-carotene (along with other orange vegetables - more on that later!), other colors of carrots are known for other nutrients:
Red carrots are heavy in lycopene, which lowers the risk of heart disease and some cancers.
Yellow carrots have lutien, a phytonutrient which is linked to the reduced risk of certain age-related eye diseases.
Purple carrots have anthocyanins, which has been shown to have anti-inflammatory properties, help protect against heart-related diseases, and support a healthy immune system.
So don't overlook those colorful carrot cousins this year!
